FORAGED FINDS | Whitebrook Restaurant, Monmouth, Wales.
For this project I was asked to create a collection of paper sculptures inspired by the plants that the chef Chris Harrod and his team forage for every week to serve in the Whitebrook, his Michelin Starred restaurant. The area is known for the paper mills that used to line the riversides and Chris felt my paper sculptures would reflect this history alongside the inspiration for the dishes he creates.
By using their menus and exploring the local area I got to know the plants that were included in the Whitebrooks' dishes. I chose a collection of species that included easily recognisable as well as less well known edible plants.
I had an old OS map of the area that I really wanted to incorporate into the sculptures to link the plants with the area. I decided the best plant to use this for was an Artichoke and I carefully cut the leaves out to make sure the different villages on the map were still visible once it was assembled. This particular piece was then mounted in a bell jar so you could see it from all sides.
